Chicken 3 Ways - Chicken Delicious

I've gotten so many requests for three certain recipes lately that I 'm going to post them all here, one at a time. The first is named "Chicken Delicious", and that's pretty much what it is. A marvelous concoction that can be like creamed chicken or more soupy like a luscious chowder. It can be made on the top of the stove if you like, although I find I prefer the crockpot version. I'll list both here. Also feel free to add other nourishing veggies like broccoli or zucchini closer to finishing time if you'd like. My family also really likes it when I put in a small potato or two but if you are looking for a healthier option than you could add some chopped cauliflower instead. Also, if you are planning to make ahead to freeze, don't use potatoes. Celery root is a wonderfully convincing substitute.

***Please note all amounts are approximations (except the butter and cream cheese) so feel free to use more or less of something if you feel like it.
***Also, if you want to just dump everything in your crock pot all at the same time and cook it, it works great too. It will be ready to eat after about 4 hours or so, but if you cook it longer the flavor will be better.

CHICKEN DELICIOUS- crock pot

2 Tbls butter, plus 1 Tbls, divided
1 cup carrots, sliced
3 stalks celery, sliced
1 medium onion, sliced
2 chicken breasts
1 carton (32 oz) chicken stock
1 bay leaf
herbs: parsley, sage, marjoram, rosemary, thyme (fresh or dried), about 1tsp of each.
8 oz cream cheese (use 16 oz if you like it extra creamy)
sea salt and pepper to taste
Optional: 1 medium potato, diced or 1 piece of celery root, peeled and diced

     Melt the 2 tbls butter in a pan over medium heat; add the carrots, celery and onion and saute until starting to brown. Remove from pan and place in crock pot. Wipe out pan.
     Melt remaining tbls of butter and add the chicken, browning on both sides. Add to the crock pot along with the chicken stock and herbs.
     Cook for 5-6 hours on high or 8-9 hours on low, adding the cream cheese about halfway through. Salt and pepper to taste before serving and add any extra veggies if desired. Enjoy!

EASIER METHOD: No butter needed. Dump everything else in the crock pot and cook for 5-6 hours on high or 8-9 hours on low. You'll know it's done when its a golden yellow color.

CHICKEN DELICIOUS - stove top version

Ingredients are same as above, minus the extra 1 tbls butter,  and you will need only about 2 cups of broth.  


     Melt the 2 tbls butter in a pan over medium heat; add the carrots, celery and onion and saute for 2-3 minutes. Add the chicken and brown on both sides, stirring the veggies around so they don't get too burned. Add chicken broth, and herbs; cover and cook for 10 minutes or until chicken is done. Uncover, stir in cream cheese until well blended. Add salt and pepper to taste if desired and serve.
